Golden Pride Barley Wine
Recipe for Middlesex Festival of Winemaking and Brewing 2008.
Festival will be held on Saturday 14th June 2008 at Perivale Community Centre.
Quantities for 1 gallon ( 4.5 litres)
3 lb 4 oz (1475 g) Pale Malt
3 oz (85 g) Flaked maize
2 oz
(57 g) Crystal Malt
5½ oz
(156 g) Soft Light Brown sugar
1½ oz
(43 g) Goldings Hops
Ale yeast
Mash all grains to a porrige-like constituency for 1½ hours at 150ºF (66ºC).
Sparge mash gently to collect 9 pints (5 ltrs) and boil with 1¼ oz (35 g) hops for 1½ hours. Turn off boiler, add rest of hops and allow to soak for 20 minutes or so. Strain off hops, allow to cool to below 70ºF (21ºC) and add yeast. Starting gravity should be between 90 and 100. Bottling gravity should be 22 to 25.
